One on my fondest memories from the beginning of Carmellas Cafe happened on April 7th 1985. With less than a week left before opening day, I was having a difficult time getting our major food supplier to deliver the special forms we needed to make our own bread on premise. At about 9:00 am that morning the sales person finally called me offered up a solution. He said why not use bread dough from Deiorios Bakery they have only been in business since 1924. I said that I really did not care for Deiorios bread and asked him to keep on trying. I hung up the phone and in about 20 minutes the phone rang and I was told it was Ben Deiorio on the line. I reluctantly picked up the call and said hello. Ben proceeded to tell me that he was just told that I did not care for his bread and wanted to know why. I was a little embarrassed but told Ben that his information was correct and that I did not want to use his bread because I prefer my bread to be crunchy and his was soft. Ben than asked if I had a (blanking) oven in the restaurant! I said yes and he said good turn it on and I will be right up to teach you a few things about bread. When Ben arrived he brought with him several boxes of his pre formed bread dough rolls. He then taught me how to slice and braid the uncooked dough loaves and then how to proof, bake and crisp the braided breads. We began serving this new product with my wife Carmellas homemade garlic butter and it was an instant hit. We have continued to serve Ben Deiorios Bread for the past twenty five years and we have no plans to change any time soon, our loyal customers would not allow it.
